PCCLD seeks a qualified vendor to run and operate the cafe within the Rawlings Library. This vendor will run and operate the cafe on behalf of PCCLD, offering coffee and limited food and catering services at the Rawlings Library, 100 E. Abriendo, Pueblo, Colorado. The cafe area was recently built and furnished as part of an extensive renovation of the Rawlings Library, which is a public library building approximately 109,000 square feet in size that is located in an urban, business district setting. It is the expectation that the coffee shop and related services will be operational on or before October 30, 2023, although this date is subject to negotiation. PCCLD expects to provide the finished space for the coffee shop and the chosen vendor will operate the cafe and provide limited catering services for meetings and events occurring throughout the Rawlings Library. PCCLD prefers the coffee shop is open and catering services are offered Monday through Saturday 9 a.m to 6 p.m. The Rawlings Library is closed in observance of the following holidays: New Years Day, Martin Luther King Jr. Day, Memorial Day, Juneteenth, Independence Day, Labor Day, Veteran’s Day, Thanksgiving Day, Christmas Eve, and Christmas Day. PCCLD is also closed on Presidents Day and Cabrini Day, these days are utilized to offer a all staff training and development day; PCCLD requests that the chosen vendor open this day and operate catering during the training day. Proposers should indicate which hours of service work best for their business if outside of the preferred hours of operation. Special events, outside of normal business hours will occur, the vendor must be able to plan accordingly to provide service during these special occurrences; a calendar of events will be predetermined and mutually agreed upon by the vendor and PCCLD. Final of operation will be mutually agreed upon during contract negotiations. Proposers should indicate how they propose to compensate PCCLD for use of the space. The cafe is located just inside of the Rawlings Library, all signage and marketing must be approved and/or created by PCCLD. The chosen vendor/cafe will have a reference on the PCCLD website and the PCCLD’s room reservation system. The chosen vendor must have all sales promotions (coupons, royalty programs, and discounts) approved in advance by PCCLD. Signage and menu boards are subject to Library approval. PCCLD will develop an annual marketing budget and plan with the chosen vendor, negotiations will take place during contract negotiations.
