The Universityseeks a nutritional, high quality, cost effective and innovative solution to the food serviceneeds of the University stakeholders. These services must be provided in alignment with academic and student life programs. The campus requires the food service vendor to promote best practices in stewardship and sustainability which willreduce the university's carbon footprint. The University requires the vendor to make every effort to buy meat, dairy and produce locally and regionally (within 150 miles from Eau Claire) for both Residential and Retail Dining.Currently the campus purchases 25% of these products locally. It is expected that the selected supplier will meet and grow this percentage to at least 28% over the life of the contract. The University believes the residential board program is the backbone of campus dining and must be of high quality, meeting the needs of the residential students. The retail program should provide options and balance and should reflect the uniquepersonalityofthe University. The catering program shouldprovide a broad rangeof offerings to meet the many varied needs of the campus and our guests. The University believes that there is potential for growth in all segments of the Dining Services program. The University isinterested in a partnership with a dining service contractor that currently operates a comparable sized program in all operations and offer innovative ideas for management of the campus dining program. The University understands the intricacies of the dining program and is looking for a partner who upholds all pieces to the dining puzzle. The overarching scope should include, but is not limited to, deliverables such as quality, variety, affordability, high-nutrition, allergen-friendly, sustainable, with a keen eye on customer satisfaction, efficient operations, technological savvy, best-practices, comprehensive marketing / public relations strategies and a deep desire for collaboration that synergizesthe Contractor with the University. The program should articulate solutions to the needs and concerns of campus stakeholders.
