Specifications include, but are not limited to: 1. Traditional Thanksgiving fully catered buffet lunch for 670 (645+25) employees. 2. Compostable dinner plates (9” round or with compartment plates), dessert plates (6” round), eating utensils, napkins and cups for cold beverages sufficient for all expected guests. 3. Deliver and set up food on chafing/food warmers and heating elements to keep food warm with serving utensils and staff servers to be ready servicing from 10:00 a.m-6:00pm. 4. An additional shift request for staff servers to serve meals to approximately 25 employees from 10:00pm-11:00pm. There will be no service between 6pm and 10 pm. 5. Provide a generous serving per plate as employees are only allowed to have one trip through the buffet line. 6. Provide professional staff to serve, and restock the meals until 6:00 p.m for 645 employees. In addition, please keep warm the additional 25 meals for the 10:00pm-11:00pm serving times. 7. Staff shall be in uniform, in a uniform dress (i.e., dressed similarly) or easily identified as catering staff. 8. Provide staff to wipe clean and sweep the service table areas after the event. The facility shall be returned to the condition it was found before the event.
