The Rooftop to Cook Top process will focus on removing grease, dust or other contaminants that may be hindering the safe operation, cleanliness, or airflow of the system and that may serve as a fuel source for fires and/or food contamination. This service will be performed in accordance with NFPA 96 standards. The contractor is responsible for supplying and installing access panels and coverings to protect the kitchen equipment to perform the work required and should set up the cleaning equipment necessary for performing the service. (initiating water and electricity hook ups, stretching of hoses, setting up water containment systems, lock-out/tag-out as needed, etc.), clearing the cleaning area of all movable equipment not associated with the kitchen exhaust system to be cleaned. If equipment cannot be moved due to utility hook ups, equipment must be protected to eliminate damage. All debris, grease, chemicals, and wastewater associated with cleaning are to be removed from roofs, downspouts, and parking areas. All wastewater that is disposed of shall be done in a proper method according to EPA standards. All drains shall be checked for working order prior to and after job complete if used. All kitchen equipment shall be returned to its location and operational state with all floors, walls and other areas affected by the cleaning process being cleaned. All cooking equipment and utensils will be returned to their original position. Prices quoted shall include charges for transporting any or all items in varying quantities to perform the work per contract scope. Complete Grease Steam Hood Cleaning All hoods at all listed locations will receive the following: Clean hoods, duct work, fans and filters using state of the art high pressure washing equipment with hose and gun combinations and patented scraping tools for built up grease removal. Wipe down all cleaned surfaces and restore the kitchen system to the pre-cleaning layout and condition. Full Exhaust Fan Maintenance Fan belts will be checked for belt tension, wear, and alignment, and replaced if broken or worn. If applicable, fan bearings will be lubricated. The contractor will detail polish all stainless-steel exposures, dry and polish hoods, and canopy with a stainless-steel polish. The contractor will provide a certification sticker showing the job completion date and the next recommended cleaning month and year. Preventive Maintenance Report The contractor will provide a detailed report on each location and noting any system conditions that need repairs following the completion of the scope of work.
