Specifications include, but are not limited to: 1. Ovens; the Contractor shall: a. Adjust all doors and springs b. Test ignition c. Test safety valves d. Lubricate motors and inspect belts e. Calibrate thermostats f. Check burners or elements g. Inspect wiring and electrical components h. Check timers i. Test door switches j. Check for proper operation 2. Ranges; the Contractor shall: a. Calibrate thermostats b. Lubricate valves c. Clean burners d. Test ignition e. Test safety controls f. Adjust burner flames g. Inspect electrical components h. Check door handles, latches and hinges i. Check for proper operation 3. Commercial Kitchen Extractor Components; the Contractor shall: a. Inspect extractor hood for any leakage b. Clean ductwork to prevent grease accumulation c. Clean filters from the extractor hood and inspect for any defects; replace if necessary d. Check all fasteners, bearings/lubrication of bearings, and belt tension of fans e. Clean fans f. Check grease and cleanliness of motor(s) g. Ensure fan is set to exhaust, not circulate h. Ensure duct drains are draining properly; ensure grease manifold tee is cleaned i. Dispose of contained grease legally; check grease container for any leaks j. Clean/change filters and grease absorbent pads as needed k. Clean out exhaust stacks l. Inspect roof for any signs of grease leaks m. Check for proper operation 4. Fryers/tilt skillets; the Contractor shall: a. Inspect for leakage b. Calibrate thermostats c. Test safety valves d. Clean burners or elements e. Test ignition f. Inspect electrical components g. Check for proper operation 5. Steam equipment; the Contractor shall: a. Regulate steam pressure b. Test safety valves c. Check controls d. Clean out boiler e. Test ignition f. Inspect for leakage g. Clean burners or elements h. Inspect electrical components i. Change water filter(s) j. Check door handles, latches and gaskets k. Check for proper operation
