Specifications include, but are not limited to: a. Service Requirements: The Contractor shall provide all labor, materials, transportation and supplies necessary to provide catering services for the Incident Management Open House. The Contractor shall have the capacity to provide food services in an outdoor setting without water or electric service. b. Food and Drink Minimum Requirements: The Contractor shall provide a variety of food and drink items that will appeal to a wide audience of both adults and children. Food and drink items shall have the ability to be easily carried as no seating will be provided. Weather can be unpredictable, so a selection of both hot and cold drinks shall be available. c. Food Preparation and Presentation: The Contractor shall be responsible for supplying and preparing all food items. If cooking on site, Contractor shall be responsible for cleanup of any spillage from their cooking apparatus. Contractor shall provide all necessary plates, napkins, cups, utensils and condiments appropriate for the type of food they provide. d. Minimum Qualifications and Capabilities: All Offerors shall provide, via references, demonstrated experience of providing catering services at a minimum of three (3) prior events attended by more than 500 people. e. Payment Options and Accessibility: All payments for food items shall be collected directly by the Contractor from attendees of the event. Contractor shall have the ability to accept multiple payment types to include cash and credit card payments. f. Licenses and Certifications: The Contractor shall meet all required sanitation and safety standards including compliance with applicable health codes. The Contractor must have all required licenses and permits to cater this event in Fairfax County. g. Clean up and Garbage Removal: Contractor shall be responsible for setting up and taking down all of their equipment. Contractor shall ensure space is left in the same condition as before setting up and trash free. h. On-site Coordination: The Contractor shall coordinate with the authorized VDOT representative prior to setting up and again prior to leaving the venue or in the event of conflicts or issues that require resolution.
