Specifications include, but are not limited to: 5.1. The Contractor shall furnish well-prepared and nutritionally adequate meals that will meet all requirements prescribed by state, federal or local law or regulation. Additionally, the Contractor shall meet all food service-related requirements necessary to comply with American Correctional Association (ACA) standards, the Virginia State Board of Corrections "Minimum Standards for Jails and Lockups", the National Commission on Correctional Health Care (NCCHC) standards as well as minimum standards that apply to food services. 5.2. The Contractor shall demonstrate the pricing of meals based on the actual number and type of meals provided per day. 5.3. Provide a guarantee that meals will be nutritious and served in a manner that makes them wholesome and palatable. Note: The monthly menus proposed by the vendor shall be reviewed and approved by the Sheriff or his designee at least thirty (30) days in advance of implementation. 5.4. Serve a minimum of five (5) nationally recognized holiday meals annually, including the Christmas, New Years and Thanksgiving holiday periods and two meals to be scheduled at the discretion of the Sheriff. Note: It is expected that all such meals will be provided at contract rates. As well as modify meals and serving times for holidays such as Ramadan or others at the request of the Sheriff. 5.5. Contractor shall be able to provide the following types of meals: a. Standard Inmate Meal: 2 hot meals, 1 cold meal daily per ACA Standards. No pork, no seafood, no peanut products in any standard inmate meals. b. Religious Meals: 2 hot meals, 1 cold meal, all vegan. c. Inmate Labor Force Lunch (Box Lunch): 2 sub sandwiches, a drink, snack, and a fruit. Contents shall be approved by the Sheriff’s Office staff. d. Staff Meals: hot breakfast and lunch 7 days per week. e. Medically Prescribed Meals: as prescribed by the Medical Section. f. Medically Prescribed Snacks: as prescribed by the Medical Section. g. Kosher Meals as needed. (Prepackaged and shelf stable meals are acceptable) h. Ramadan Meals as needed. i. Bag Lunch: 2 sandwiches and 1 milk, available 24 hours per day as needed. j. All meals must be peanut free.
