The service requirements are as follows: Table service meal for approx. 20 persons and service line style meal service for approximately 110 people – this number will be confirmed for the winning bidder by Monday, December 2 nd . 10lbs of medium peeled cocktail shrimp AND 10 lbs of medium peeled, steamed, and spiced (mild spice) shrimp, with cocktail sauce, to be served during cocktail hour. Provide a list of available appetizers to be chosen from, from the provided list 3 will be chosen to be included and served during cocktail hour. Chosen appetizers will be provided when guest number is confirmed. 12 oz Rib Eye (with availability to cook to temp if requested) and 8 oz seasoned boneless, skinless chicken breast – numbers for each meat will be confirmed with number of guests expected. Please also quote a 12 oz Prime Rib (we will only serve one type of beef)
