All correspondence must be made through the Vendor Portal. Specifications include, but are not limited to: MENUS: CRTC serves three meals per day plus an evening snack. Cold meals must remain within the nutritional/caloric guidelines spelled out in this agreement. All menus must be certified by a nutritionist, and include at least 2400 calories per day. CYCLE: Two 28-day cycle menus, Spring/Summer and Fall/Winter, must be submitted with the proposal. This includes all condiments, seasonings, sweeteners and similar items. Some items, such as dairy, juice and bread items, should be included in the menus, but may be purchased separately from other vendors. FOOD ORDERING GUIDE: An Easy Ordering Guide should be provided for each menu cycle. Guides should be included with your proposal response. All orders placed prior to 10:00 AM, Monday through Friday, must be delivered the next business day. THERAPEUTIC DIETS: Therapeutic diets, such as Low Sodium and Diabetic menus should be provided. Special diets must conform as closely as possible to the food served other inmates. The source book to be used is the Simplified Diet Manual with Meal Patterns, latest edition, Published by the Iowa Dietetic Association, or a comparable source subject to the approval of the CRTC. HOLIDAY MEALS: Traditional meals must be served on Thanksgiving, Christmas, Easter, Memorial Day and Labor Day and should be included in the proposed menus. FOOD PREPERATION EQUIPMENTS: The following items of equipment are to be furnished, at no charge, for use by CRTC for the duration of the contract. CRTC will be responsible for maintaining this equipment in good operating condition. Quantities may vary throughout the contract, as they should be based on actual number of residents.
