Specifications include, but are not limited to:Introduction to Business Opportunity The Bullock Texas State History Museum (“Museum”) is seeking a well-established restaurant operator to assume the operation of its soon to be renovated (updated) café with the goal of a start date of operation on or before January 2, 2017, as mutually agreed. This is a re-issuing of an earlier request for proposal dated 7/31/16. All firms interested in this business opportunity must submit a response to this revised request to be considered.The total café space is approximately 6,800 SF which includes indoor (93 seats) and outdoor, balcony (62 seats). The café is undergoing a redesign by the Austin firm, Verokolt, who also created the design for Italic, 24 Diner, Irene's, among others. The café has a fully equipped commercial kitchen including a walk-in freezer, ice maker, ranges, fryers, grills, well refrigerated counters, steam tables, dishwasher, grease traps, and more. Bonus flexible storage is available near the kitchen in the Museum's back-of-house storage areas. The café will be move-in ready with electricity and water paid, no property taxes on state government-owned property, free parking for café staff, a loading dock for large deliveries which will be shared by Museum and café operator, 24-hour security, and support from the Museum's marketing and web teams. Operator will pay for gas and trash removal fees. The Museum's hours are 9 am - 5 pm, Monday through Saturday, 12 noon - 5 pm on Sundays, and evening programming running until 10 pm, when scheduled. The café can be open the same hours or fewer at operator’s option. Working within the Museum's hours and programming, the operator will be able to develop and maintain menus to cater to a diverse audience including nearby offices, the Museum's walk-up visitors of all ages, group lunches, Museum staff and volunteers and evening public programs planned throughout the year. The surrounding area and close proximity to State offices and the UT campus provides a heavy, built-in lunch crowd with strong potential to support breakfast offerings and evening service when the Museum is open at night
