A. Meals/Menus 1. Inmate Meal Plan. The Contractor must develop and maintain a written 28-day non-repetitive Inmate Meal Plan detailing all inmate meals, to include standard meals as well as special diet meals and snack meals (described below). The meal plan must indicate what is served at each meal time and include specific portion sizes (indicating cooked or raw weight when appropriate) and caloric content. The meal plan must include special holiday menus to be served on Thanksgiving and Christmas days. All menus must comply with applicable laws and standards and the requirements contained herein. Any changes to an Inmate Meal Plan must be approved by the Bexar County Sheriff’s Office (the “BCSO”) prior to implementation. All respondents must submit with their proposal an Inmate Meal Plan that complies with the requirements set forth herein. 2. Inmate Meal Plan Review. The Contractor will be required to submit a written report of a registered dietician’s findings and recommendations to the County for each menu in the Inmate Meal Plan no less than quarterly. Both standard and special menus must be reviewed and approved by a bona fide registered dietician, provided by the Contractor at its sole cost and expense, to meet or exceed the most current dietary standards for inmates and detainees for nutritional and caloric content as established by applicable federal and state laws and standards.
