Specifications include, but are not limited to: Must have a minimum 40-gallon capacity, maximum 45-gallon capacity, Must have a pedestal base, Must include 304 stainless steel exterior with a 316 stainless steel interior liner, Must be two thirds (2/3) steam jacketed, Must have a steam pressure regulating valve, Must have a hinged cover, Must have a steam trap, Must have a 3” TDO tangent draw-off in Liew of standard 2” draw-off, Must be equipped with a removable one quarter perforated stainless steel strainer at the outlet, Must have etch marks, 4-gallon increments, Must be able to operate dependably between 5 and 25 PSI, Must include a 25-psi steam jacket rating, Must meet NSF and all known health department and sanitation codes.
