Pork, Bacon Thick Sliced 4.11.1 Catch weight cases WILL be allowed, unless otherwise indicated in this ITB 4.11.1.1 Good(s) may be non-seconds or seconds. 4.11.1.1 If Bidder is bidding non-seconds, MUST be 18-22 slices per pound with slice length to be 7 to 9 inch strips and width no less than 0.75 inch 4.11.1.2 If Bidder is bidding seconds, target sizing is 18 to 22 slices per pound and MUST NOT contain ends and pieces 4.11.2 Sodium content to be no more than 240 mg per 15 gram serving (1 slice) 4.11.3 Good(s) may be bulk packaged as follows: 4.11.3.1 LAYED-OUT PACK: Slices placed adjacent to each other on grease and/or heat resistant paper 4.11.3.2 SHINGLE PACK: Slices placed on grease resistant paper 4.11.3.3 STACK PACK: Slices packed on edge in the sequence of slicing on grease resistant paper 4.11.4 ODOC will accept sweet, maple, wet cured or smoked Good(s) 4.11.5 Good(s) MUST come from side (belly) or back cut, raw and an originate from fresh, NOT frozen pork 4.11.6 Fat content per serving to be no more than 70 % fat (serving size is based on two (2) strips of bacon) 4.11.7 ODOC WILL NOT accept water or solution injected Good(s) for this line item unless it part of the curing process
