Preventive maintenance shall include, at minimum: a) Remove and properly dispose of fats, oils, and grease (FOG). b) Scrape and clean FOG from interior sides, baffles, and lid. c) Inspect piping baffles to ensure they are intact for proper operation of grease trap flow. d) Confirm trap capacity meets or exceeds facility demand. e) Inspect flow-control valve and air intake, as applicable. f) Inspect for proper clearance and accessibility. g) Inspect trap and baffles for cracks and confirm if fully intact. h) Inspect for watertightness and tight-fiting lid. i) Consult with authority having jurisdiction (AHJ) for local ordinances concerning appropriate water temperature and distance from fixtures of the grease trap, as applicable.
