4.11 GOOD(S) SPECIFICATIONS FOR: Pork, Irregular / Regular Sliced 4.11.1 Catch weight cases will be allowed for this ITB 4.11.2 Goods may be sliced or irregular sliced, 4.11.3 Goods MUST be boneless and fully cooked 4.11.5 No chicken or turkey will be accepted for this ITB 4.11.6 ODOC will accept smoked or flavored Goods 4.11.7 Maximum salt content to be no more than 330 mg per ounce 4.11.8 Maximum fat content to be no more than 2 grams per ounce 4.11.9 Maximum water content to be no more than 12% 4.11.10 Goods may be injected with a solution injection to enhance performance, freshness, and safety. Injected solution must be in accordance with USDA Food Safety Inspection Service (FSIS) requirements 4.11.11 MECHANICALLY SEPARATED AND FORMED GOODS WILL NOT BE ACCEPTED 4.11.12 Good(s) must be gluten-free; good(s) containing wheat-based ingredients will not be accepted
