The Kitchen shall be serviced each quarter. * Contractor is to provide all equipment and vacuum truck, as described below, to pump out and dispose of grease and/or waste material in a legal manner. * Truck tank size: A minimum of 2,000 gallons * Hose: 3 inch suction hose * Evacuation should include FOG (fats, oils, and grease), sludge, and any hardened build up inside the traps. Contractor shall be responsible for any spills or leaks resulting from evacuation process. * This service shall be in accordance with all local ordinances and State Codes including LA. Admin. Code 1005 N. 4C Grease Traps. * Service shall be provided during non-peak hours to avoid minimal disruption of meal service. Monday-Friday 7:00 am -10:00 am and 1:00 pm - 4:00 pm.
