GOOD(S) SPECIFICATIONS FOR: Beef, Roast Ends & Pieces; 4.11.1 Catch weight cases WILL BE ACCEPTED for this ITB; 4.11.2 UTILITY GRADE MEAT GOODS WILL NOT BE ALLOWED FOR ANY GOODS INDICATED IN THIS ITB ; 4.11.3 Goods indicated in this ITB to be all beef, boneless and MUST come from USDA approved plant and facility; 4.11.3.1 All beef Goods must be of good color, normal to the grade and be practically free of residue from sawing the meat and bones, blood clots, foreign odors, blemishes, discoloration or mishandling; 4.11.3.2 Beef Goods that contain meat from the head, tongue, heart, esophagus, spinal or straight added fat WILL NOT be allowed; 4.11.3.3 All beef Goods bid may be any Beef Class EXCEPT bull or stag, with Yield Grades 1 through 5; 4.11.4 ODOC WILL NOT accept marinated or breaded Goods; Ends & Pieces: 4.11.8 Goods may be fresh, seasoned; MUST be fully-cooked; and processed from whole muscle, sliced (not shaved) ; 4.11.7.1 Full intact slices shall be no less than 1/8 inch thick by ½ inch length and ½ inch width; 4.11.9 Goods MUST be 100% roast beef, WILL NOT accept pastrami, corned beef, etc; 4.11.10 Beef that is mechanically separated from bone with automatic deboning systems or advanced meat (lean) recovery (AMR) systems WILL NOT allowed. WHOLE OR SLICED: 4.11.8 Goods to be fully cooked, and may be seasoned or unseasoned, whole, sliced, or irregular sliced and processed from whole muscle. Goods to be prepared from any beef roast type, excluding shank or heel; 4.11.9 Beef that is mechanically separated from bone with automatic deboning systems or advanced meat (lean) recovery (AMR) systems is NOT allowed. 4.11.10 If offering sliced each case must contain a minimum of 80% slices. 4.11.11 Ends & Pieces will not be allowed for this ITB
