OVERVIEW AND PURPOSE: The Illinois Department of Corrections (IDOC) operates a training academy for new correctional officers (Cadets). As a part of the training day the Cadets will be provided lunch at the training site. The Contractor will provide individually packaged lunch boxes for fifty (50) Cadets and staff members Monday through Friday. The training academy location is located at the Shabbona Middle School located at 725 School Street, Morris, Illinois. The Contractor will deliver all meals by 11:00am each day starting January 29th and ending March 14th, 2025. SUPPLIES AND/OR SERVICES REQUIRED: The Illinois Department of Corrections is procuring daily lunch Catering Services for its Training Academy in Morris, Illinois. Vendor will provide a menu equal or equivalent to the examples provided below: Traditional White Albacore Tuna Salad With sliced tomato and romaine lettuce on freshly baked bread. Chicken Salad With romaine lettuce on freshly baked bread. Grilled Chicken Breast With mayonnaise and romaine lettuce on freshly baked bread. Chicken Club With grilled chicken breast, romaine lettuce, bacon, tomato, avocado, and mayonnaise on freshly baked bread. Turkey Breast With Gruyere Swiss, romaine lettuce, and cranberry jelly on freshly baked bread. Ham 'N Cheddar With honey Dijon mustard sauce and romaine lettuce on freshly baked bread. Vietnamese Pork Bahn Mi Grilled & marinated pork, carrots, red onion, cucumber, radish, jalapeño, cilantro, and peanuts with spicy peanut aioli on freshly baked bread. Grilled Salami Thick slices of grilled kosher salami, Muenster cheese, caramelized red onions, spicy mustard mayonnaise and romaine lettuce, served on freshly baked bread. Roast Beef Sandwich Whole wheat bread, sliced provolone, shaved roast beef, horseradish cream, arugula. VEGETARIAN OPTIONS Mediterranean Vegetable Sandwich Sweet peppers, feta, sliced cucumbers, crisp mixed greens, vine-ripened tomatoes, red onions, hummus, served on freshly baked bread. Caprese Sandwich Toasted ciabatta, basil mayo, heirloom tomato slice, buffalo mozzarella, fresh basil, balsamic glaze. Egg Salad Sandwich Marble rye, classic egg salad, butter lettuce, tomato, red onion. Grilled Vegetable With roasted red pepper hummus on freshly baked bread. Fresh Vegetable & Cheese With dill havarti, cheddar, tomato, and English cucumber with cucumber dill sauce on freshly baked bread. Roasted Beet Red & yellow beets, pickled onions, honey goat cheese, and watercress on freshly baked bread. SIDES: Potato Chips Cole Slaw Macaroni Salad Baked Beans Garden Salad and Dressing Whole Fruit Vendor is responsible for the direct production of the food products. Should any items be deemed unfit for consumption vendor will provide immediate replacement within thirty (30) minutes.
