I. Introduction Community College of Rhode Island ("CCRI" or "College") intends to secure a Contract for the management and operation of its campus food services. The following is a broad statement of required services subject to the contract terms for management of CCRI's campus food services and conference center. The Contractor shall manage all functions of the food service facilities on CCRI's Warwick, Lincoln, Providence, and Newport campuses in a manner that RFP R0072423 Community College of Rhode Island Dining Services Page 5 of 22 Revised 12/26/24 best serves the College’s students, faculty, and staff. CCRI’s impetus for issuing this RFP for management of campus dining on the College’s four campuses is best described as follows: To broadly improve the existing program to drive sales increases. Examples: • Expand menu choices, including more offerings that reduce customers’ exposure to harmful allergens (vegan, vegetarian, gluten-free, lactose-free, etc.). • Enhance services – made-to-order dishes, chef’s station for preparing “specialties” periodic menu upgrades (e.g., specialty baked goods and desserts), special “culinary events” in the cafes, visiting chefs from area restaurants, student chef competitions, etc. • Improve the variety of “healthy and nutritious” foods available in the cafe serveries. • Effective management of financial resources
