General Scope of Work The vendor shall operate in the Vendor's name; the food service facilities for the purpose of dispensing food, nonalcoholic beverages and such other items as may be authorized by DCAMM, in accordance with all terms and conditions specified herein. Menu Profile The Vendor shall offer a variety of food options that meet the needs of the customers, including options for vegetarian, vegan, and organic, healthy, and gluten-free. Menus must also include items for people with dietary restrictions and allergies. All items available in the cafeteria must be labeled with calories per serving and displayed on menus in a clear and conspicuous manner. At a minimum, the vendor should be able to: • Prepare and provide food and beverages with an emphasis on products that are healthy, fresh and is prepared quickly and efficiently in a safe clean environment. Currently, the vendor provides breakfast, coffee service, lunch, and snacks. Catering is provided upon request to any of the State occupied buildings on the Capitol Hill Campus; and • Maintain operations in an environmentally responsible and sustainable manner, using paper or compostable products wherever possible Cleaning/Janitorial Services The vendor is responsible for cleaning and trash removal in all areas used (if any) Personnel & Supervision. The Vendor shall provide a detailed organizational chart that includes manager and support staffing and provide the minimum staffing commitments within 7 days of receiving a tentative selection letter and this organizational chart will be with the monthly billing statement. The vendor shall enter an agreement with the agency that that will include: Sanitation and Quality, Service Scheduling, Recycling, Hazardous Conditions, Constant Compliance with OSHA. The contract shall also address the definition of Security Areas and terms of Liability, Financial reporting requirements including payroll, equipment records, building space and proposed modifications, parking provisions, preventative maintenance, delineation of vendors space and lastly the contract shall define issues related to protection and damages. The vendor shall also be required to provide the agency with an Emergency Action Plan
