Specifications include, but are not limited to: 1. Food Service Operations: o Operate and manage the campus cafeteria, including all necessary staffing, equipment, and supplies. o Provide a wide range of food and beverage options, including hot meals, grab-and-go items, snacks, and beverages. o Ensure menu variety to cater to diverse dietary needs, including vegetarian, vegan, gluten-free, and culturally specific options. o Maintain high standards of food safety and sanitation in compliance with local and state health regulations. 2. Service Hours: o The cafeteria must be open Monday through Friday, from 7:00 AM to 7:00 PM, and Saturday from 8:00 AM to 4:00 PM. Additional hours may be required during special events or peak periods. 3. Staffing: o Hire, train, and manage all food service staff. o Ensure staff are professional, courteous, and trained in customer service and food safety. 4. Equipment and Facilities: o Maintain all small equipment and supplies needed for food preparation and service. o Ensure that the food service areas, including preparation and storage areas, are clean and sanitary. o CCA will maintain the dining area, and large equipment such as the walk-in freezer, fryers, and hoods. o Inspections of hoods and fire suppression systems will be handled by CCA. o Obtain and maintain all necessary licenses and permits for food service operations as required by the State of Colorado, Arapahoe County, and the City of Aurora. o A business license as a food retailer must be obtained within two weeks of the signed agreement, and proof of a health inspection must be provided within 90 days. 5. Financial Management: o Implement a transparent and efficient point-of-sale system. o Provide regular financial reports to CCA, including sales, expenses, and profitability. o Develop a revenue-sharing model or commission structure that benefits both the vendor and CCA, contributing to the financial health of the college. o Set up the capability to accept Electronic Benefits Transfer (EBT) payments.
