Ball valve for each just above ceiling and just before turning under the sink. Install water shutoff valve for hot and cold at the sink deck level for pot wash soap dispensers. Install water shutoff valves and connect 2 faucets. Cooks prep Island sink prep sink. Drop 1 hot and 1 cold to supply faucet in cooks prep sink. Install ball valves just above ceiling and at the fixture level. Water lines will drop from the ceiling. To secure and protect pipes, install bracing tower from floor to above working height.
