Specifications include, but are not limited to: Pizza shall be at least 13 inches in diameter and cut into 8 equal slices. Pizzas that are visibly uneven will be replaced, at no charge to the district, and delivered before students are waiting in line for the delivery. Pizza must be made with 1 pound of real cheese (as identified in the Child Nutrition Program Food Buying Guide) per pizza. Crust may be any style and must be made with at least 51% whole grain flour and the remaining flour must be enriched and must meet a two ounce whole grain rich grain serving. Product must be the same for all locations and may not be changed by vendor or school representatives. Pizza will be prepared fresh daily and baked immediately prior to delivery. Pizza shall be cooked to the temperatures required in Kansas Food Code 3-401.11. Pizza must be delivered at or above 150 degrees Fahrenheit. Pizzas delivered below 150 degrees shall be rejected. Delivery containers must be structured to protect and insulate pizza during transportation and holding in USD 260 warming cabinets. Two copies of Nutrition Facts label or nutrient analysis forms document that products contain no trans fat (less than .5 gram per serving).
