Specifications include, but are not limited to: Cafeterias: Vendor will operate a cafeteria on the identified property which will begin operations no later than 60 days from the date of the contract. Vendor will maintain open hours at the cafeteria from Monday to Friday, 6:00am to 4:00pm. Vendor shall offer a full service breakfast menu, lunch menu, snack menu, drink menu, and other food and beverage items. Vendor will offer at least 4 hot food platters for breakfast, and 4 hot food platter options for lunch. Vendor will purchase all material and supplies for the operation at their own expense. Vendor shall hire, train, and pay all staff working for the cafeteria operation. Vendor agrees to obtain all licensing, pass all inspections, and display all required certificates to operate a restaurant. Culinary Arts Training Program: Vendor shall use methods and practices that are in accordance with professional standards in the industry and with the standards of the Commission of Accreditation of Rehabilitation facilities when training referred consumers from DVR, DSAMH, DVI. Vendor will collect program performance data, including outcome measures and shall conduct consumer satisfaction surveys. Vendor will share program information and satisfaction information as requested by DVR, DSAMH, DVI. Vendor will use qualified personnel to provide services who meet appropriate certification and professional standards. Vendor will provide monthly written feedback on consumer progress and discuss any substantive issues that arise with referral agency. Direct service staff is required to attend DVR, DSAMH, DVI sponsored in-service training each contract year.
