Specifications include, but are not limited to: 1. Review current special diet procedures and supporting documentation and provide recommended revisions that assure compliance with federal/state laws governing Child Nutrition Programs and safe preparation and service of special diet meals to students in consideration of WCPSS care plans. 2. Process medical statement forms that contain medical practitioner directives for special diets for students. Communicate with medical professionals, WCPSS staff, and/or parents as needed. Assign a special diet to be served to students in alignment with their medical practitioner’s directives. 3. Review existing special diet foods and identify new menu offerings to fill diet orders using current WCPSS/CNS products. 4. Research/recommend alternative products/sources that may improve special diet menu offerings. Contribute to on-site food testing as needed. 5. Assist child nutrition administrator(s) with the development of special diet trainings that includes food allergies management, texture modified diets, HACCP procedures to prevent cross-contamination, how to read a food label and recognize ingredients, and how to choose substitutions, with a pre-test and a post-test to validate trainee understanding of appropriate processes to be followed in Wake County Public Schools. 6. Provide supplementary training to school nutrition staff as needed.
