Specifications include, but are not limited to: The Minnesota Department of Corrections (DOC) is seeking proposals from consultants to provide Halal religious meal expertise to assist the DOC in ensuring menus offered to incarcerated individuals to meet their religious dietary guidelines and restrictions. Standard menus are developed at the system-wide management level with coordinating preparation guidelines, to accommodate accurate and consistent religious meal service at all of the State of Minnesota prison sites. Menus are revised seasonally twice per year and have a male version and a female version. Additionally, special religious menus are needed for state holidays, religious holidays, medical diets and other non-routine food service meals. The Halal meal program requires an annual statement of Halal approval and certification.
