Specifications include, but are not limited to: Respondent shall be the sole supplier and/or coordinator of inmate food and laundry management/services. Respondent shall be responsible for all meals and inmate laundry provided to the inmate population of the Waupaca County Jail. Respondent shall be responsible for procuring food items to be served in conjunction with the approved menu. Respondent must employ staff to manage food and laundry services. The jail will supply additional workers through the inmate worker program. Inmate Meals a. Successful vendor shall provide three meals per day to the inmate population, breakfast (cold), lunch (hot) and dinner (hot). b. Meal delivery shall be on a set schedule determined by the facility. c. All menu items must be reviewed by a qualified nutritionist or dietician and approved by the Jail Captain. d. The successful vendor shall assure dietary operation is in compliance with standards set by the American Correctional Associations and the Wisconsin State Department of Corrections as well as all Federal, State and Local laws, codes, and regulations governing the food service industry. e. Must serve a minimum of 2900 calories per day per inmate. f. Therapeutic diets shall be available upon medical authorization. Special diets for religious reasons shall be accommodated as directed by the policies and procedures of the facility. Staffing a. Food and Laundry service program must be staffed with a full time on-site Food Service Manager. b. All personnel hired to work at the Waupaca County Jail shall be required to submit a valid photo ID and pass a background investigation conducted by the Waupaca County Sheriff’s Office. All personnel hired shall be subject to the approval of the Waupaca County Sheriff’s Office. c. All personnel shall comply with current and future Federal, State, and local laws, regulations, court orders, administrative regulations, administrative directives and policies and procedures of the Waupaca County Sheriff’s Office. d. The successful vendor shall be responsible for ensuring that its staff report any problems, missing/damaged equipment, and/or unusual incidents to the Jail Administrator or designee immediately or in an appropriate period as designated by the Jail Administration. e. The successful vendor shall be responsible for establishing the work schedules of all food service employees in such a manner as to meet all objectives and requirements of this RFP.
