• Review and make recommendations of menus • Evaluates and / or review medically prescribed diets, assess and monitor nutritional status of residents and document assessment and monitoring in medical records including admission assessments and evaluations, quarterly and annual assessments, and significant change assessments that include recommendations based on residents’ nutritional status • Participation in the facility MDS process and the interdisciplinary plan • Direct communication with residents’ primary physician and/or specialist, pharmacist and other healthcare practitioners as necessary • Observe meal preparation and dining services to monitor quality, service, temperature and recommend changes as needed • Inspect kitchen for sanitation, safety and quality to assure the department is in compliance with state and federal regulations • Ensure regulatory compliance with all local, state, and federal regulations • Conduct pre-survey audits to assure dining service department complies with state and federal regulations
