Specifications include, but are not limited to: Proposer will provide the following • Nutritionally balanced jail tested menus developed by registered dietitians specifically for the needs of the Daviess County Detention Center. • Menus that will meet or exceed nutritional requirements as specified by established jail standards, and in comparison to other correctional institutions with a minimum of 2,600 calories per day for adults and meet all requirements set forth by the Kentucky Department of Corrections for nutritional content. Proposal response to include Master Menu cycle for four (4) weeks and a nutritional analysis of the menu. Menus must include all portions, sizes and designate them as cooked or raw weight. • Meals will be served 3 times daily. At least two meals will be hot. • Medical and religious diets must be offered. • Special Holiday meals at Thanksgiving and Christmas. • Bag Lunches for inmates who are not in their housing unit at mealtime due to court attendance, work detail, etc., and associated cost if different than typical meal. • Food should be purchased locally as much as possible. • Sufficient staff should be provided to manage kitchen operations. County shall provide inmate labor to assist with food preparation and cleaning. Staffing plan should be provided. • Proposer should provide cleaning chemicals for the kitchen operation. • Vendor shall comply with all federal, state and local statutes, ordinances and regulations and the American Correctional Association Standards, to include: • 501 KAR 3:020 • 501 KAR 3:100 • 501 KAR 3:130 • 902 KAR 45:005 • KRS 196.035 • KRS 217.280 to 217.390 • KRS 441.055 • KRS 441.135
