Specifications include, but are not limited to: This request is to establish a contract for catering services for the Tuesday Teas at Waveland State Historic Site, 225 Waveland Museum Lane, Lexington, KY 40514. This service would be for food every week for the park's regular Tuesday Teas and Special Teas (such as Derby, Mother's Day, Valentine's Day, Ghost, etc.). This will be ongoing each year as needed. The park plans to add a tea and lecture series (one every other month) as well as have enough padding to be able to accommodate private teas, such as business meetings, showers, and birthdays. The park would call the caterer with a final count on the Friday of each week. The park would be able to pick up the food for any number under 20 people (Within a 20-mile radius of the park). Anything over 20 people (or outside of the 20-mile radius of the park) would need to be delivered to the park by noon on Tuesday, tea day. There would need to be flexibility with the vendor as the park may have 0-2 people or up to 40 people per week. There is no guarantee that Waveland will have teas every Tuesday due to unforeseen circumstances. The park also has special events from time-to-time and would need those covered as well, but the park would give the vendor adequate notice of such events. The items below would need to be marked and placed on covered large/small tin type trays. The park will plate and serve the food. The park will also require gluten free, vegan, and sugar free options (or other food allergies) to mimic or come close to the below options with few substitutions. All substitutions must be approved by the Park Manager. 1 - Chicken Salad Croissant 1 - Country Ham Biscuit 1 - Pimento Cheese puff or similar (Must be approved by Park Manager). 1 - Benedictine or Cucumber sandwich with no crusts 2 - Vanilla Bean scones 1 - Homemade lemon curd 1 - Chocolate dipped strawberry and possibly another fruit substitute if strawberries are not in season 3 - Smaller desserts - can vary but elegant and bite size. (Must be approved by the Park Manager).
