Specifications include, but are not limited to: 4.11 GOOD(S) SPECIFICATIONS FOR: Poultry, Ground Raw 4.11.1 Good(s) MUST show no evidence of contamination, dehydration or mishandling and conform with USDA Standards and Grades for Poultry 4.11.2 All Poultry Good(s) must be processed, handled, packaged, and labeled in accordance with the Wholesome Poultry Products Act and its regulations. 4.11.2.1 U.S. Procurement Grade A poultry will be accepted for this ITB 4.11.3 Good(s) may be processed from turkey, chicken or combination of turkey and chicken 4.11.3.1 Good(s) containing skin, wing, back or neck meat, giblets, cartilage, or kidneys WILL NOT be accepted 4.11.4 Only ALL meat Goods will be accepted for this ITB 4.11.5 Maximum allowable fat content is 20%; maximum allowable water content is 10-15% 4.11.6 ODOC WILL NOT accept flavored or seasoned Good(s) 4.11.7 Mechanically separated Good(s) (MSP) WILL NOT be accepted 4.11.8 ODOC WILL NOT accept Goods that contain Textured Vegetable Protein (TVP) 4.11.9 Ground type: regular to coarse ONLY 4.11.10 Good(s) must be gluten-free; good(s) containing wheat-based ingredients will not be accepted 4.11.11 Goods may be 100% light meat or a mixture of no more than 50% dark meat and 50% light meat 4.11.1 CHICKEN LEG QUARTER REQUIREMENTS: 4.11.1.1 Good(s) to consist of thigh and leg only, ready to cook, raw, unflavored, with skin and bone in, target weight for each quarter is 10 ounces with a 2 ounce variance. 4.11.1.1.1 ODOC will accept whole leg quarter (one leg and thigh attached); detached leg and thigh (MUST have approximately the same number of legs to thighs per case); or saddleback leg quarters 4.11.1.2 ODOC WILL NOT accept flavored, marinated or breaded Good(s) for this line item 4.12 ESTIMATED DELIVERED QUANTITY PER GOOD ITEM: 4.12.1 Poultry, Ground Raw: An estimated two (2) FTL are required for this item listed in Section 5, “Pricing Page”. For purposes of this ITB Line item # a FTL is estimated at 40,000 pounds. ARO, one (1) FTL to be delivered within 30 days or as scheduled by warehouse staff. The Purchase order issued to the awarded Bidder will indicate the delivery dates and must be confirmed with the ODOC warehouse receiving staff. 4.12.3 Chicken Leg Quarters: An estimated three (3) FTL are required for this item listed in Section 5, “Pricing Page”. For purposes of this ITB Line item # a FTL is estimated at 40,000 pounds. ARO, one (1) FTL to be delivered within 30 days and the remaining FTLs to be delivered 45 days apart or as scheduled by warehouse staff. The Purchase order issued to the awarded Bidder will indicate the delivery dates and must be confirmed with the ODOC warehouse receiving staff.
