Specifications include, but are not limited to: The provider must develop and maintain policies and procedures pertaining to the delivery of Congregate Nutrition services. 7.2 All meal sites must be approved by the appropriate Public Health and Fire officials. State and local fire, health, sanitation, and safety regulations must be adhered to by the Nutrition program providers. Meal site programs must maintain current files of the appropriate certifications and/or visitation reports for each site under their management. 7.3 Providers must develop and implement a policy manual containing at minimum the following information: 7.3.1 Fiscal Management 7.3.2 Food Service Management 7.3.3 Safety and Sanitation 7.3.4 Staff Responsibilities
