GlutoPeak
Background and Scope
The Agriculture Research Service (ARS) has a requirement for the purchase of a GlutoPeak instrument that rapidly (1‐10 minutes/sample) measures gluten quality/rheological properties in wheat flour and wheat meal using a 3‐10 g sample. Instrument must include measuring bowl (qty 2) and mixing paddle (qty 2), refrigerated/heating circulator, computer, and software required for operation.

Requirements
• Instrument performs GlutoPeak rapid test method for gluten quality in white flour and whole wheat meal.
• Detects and reports mixing profile through Windows 10-compatible software.
• Paddle speed profiles 0 – 3500 rpm
• Total of two mixing bowls and two paddles
• All components 115V
• Computer fully configured with software for collecting and reporting mixing profiles.
• Refrigerated circulator to maintain bowl temperature during testing
o USB connection and USB cable
o Bath lid and drain tap included
o No side vents
o Working temperature range -20 to 150 °C
o Temperature stability ± 0.03° C
o Pump capacity flow rate 15 l/min.
o Pump capacity flow pressure > 4.8 psi
o Refrigerant R134a
o Ambient temperatures 5 – 40 °C
o Filling volume 3 – 4 li.
o All required tubing and connectors required for use with Glutopeak
• One year parts and labor warranty coverage
Testing and Verification
Once commissioned, the equipment will collect and report gluten torque curves with parameter reproducibility for a standard flour sample of ≤ 5%.
