Specifications include, but are not limited to: To deliver high quality food service that can be audited against established nutritional and health standards meeting or exceeding a 2850 calorie per day diet; To operate the food service program using correction experienced and professionally trained personnel; To operate the food service program in a cost effective manner with full reporting to the County; To implement a food service plan with clear objectives, policies, procedures and evaluation of compliance; To maintain an open collaborative relationship with the County Sheriff and Detention staff; To maintain standards established by the County, as well as American Correctional Association (ACA), and any applicable State and Federal Correctional Food Service Standards; To offer a comprehensive program for continuing staff training and inmate training and education; and, To operate the food service program in a humane manner with respect to the inmates' right to basic health and nutritional standards.
