Specifications include, but are not limited to: The Department of Behavioral Health Services (DBHS) is seeking a qualified Contractor to provide food services for clients at DBHS. 1. Meal Requirements A. Meals provided must meet current and any updated Recommended Daily Allowance as established by the U.S. Department of Agriculture and will provide a standard 2,800 calorie per day per person. The daily allowance will be distributed between three (3) meals per day. Each meal will include a one eight (8) ounce cold beverage. In the circumstance that these terms or standards change at any point of the contract, the Contractor shall adjust the meals at no additional cost to the County. 1. The Contractor shall not make any changes to the meal schedule or menus without written consent of the Department Director or his/her designee. 2. The Contractor agrees that all meals provided will be nutritious and served in a manner that is pleasant. Proposed monthly menus with the Recipe Handbook by the Contractor shall be reviewed and approved two weeks prior to the beginning of the month by the Department Director or his/her designee prior to implementation. 3. No more than thirteen (13) hours shall pass between dinner and breakfast meals unless an enhanced snack (which includes protein) is provided. The final meal schedule shall be mutually agreed upon between the Contractor and Department Director or his/her designee. B. Low salt low sodium meals shall be prepared when prescribed by appropriate clinician. According to the American Heart Association, low sodium is less than 2,000 mg per day. C. Diabetic meals shall be prepared when prescribed by appropriate staff at 2,000 calories (75g carbohydrates per meal). D. Snacks containing 30-40g carbohydrates each snack. E. Sandwiches containing turkey and wheat bread.
