Specifications include, but are not limited to: 3.1.6 Beef Patties Requirements: 3.1.6.1 Using USDA Foods Bulk Beef, coarse, ground, Bidder to process (USDA # 100154) into Beef Patties.; 3.1.6.2 Serving size shall provide two (2) oz. meat/meat alternate and shall meet the following nutrition standards: Basic Nutrition Standards: Total Fat (g) ≤10 grams; Total Saturated Fat (g) ≤4.5 grams; Trans Fat (g) 0 grams; Total Sodium (mg) ≤300 milligrams; 3.1.6.3 Product shall be trans-fat free. Exception will be made for naturally occurring trans-fat if a manufacturer statement supports that the fat is naturally occurring and does not contain synthetic trans-fat.; 3.1.6.4 Product shall be either CN labeled, or creditable toward the meat/meat alternate meal pattern component by producing a Product Formulation Statement (PFS). Bidder shall provide a copy of either the CN label or PFS documenting the creditable amount of meat/meat alternate.; 3.1.6.5 Fully cooked, round patty must be 3-1/2" minimum diameter, with a 4" maximum diameter.; 3.1.6.6 Cooking temperatures to comply with Food Safety and Inspection Service (FSIS) requirements.; 3.1.6.7 Product must be able to be cooked as a stand-alone product, i.e., cannot be a product that must be cooked in a cooking bag or in liquid of any kind.; 3.1.6.8 Finished product shall be individually quick-frozen and then packed.; 3.1.6.9 Product to be at zero (0) degrees Fahrenheit (F) or less prior to loading on truck for delivery to State warehouse(s).
