Specifications include, but are not limited to: ● Meal service for up to 70 children ages 1-5. ● 50 Weeks per year Food Purchasing ● Food service is responsible for all food purchasing. ● Food can be delivered and stored in our kitchen. However, it is the food service’s responsibility to unload and put away all food items upon delivery. Food Prep ● Whether the food be prepped in our kitchen or off campus,it is the expectation that all food be prepped and TCS (Time/Temperature Control for Safety) adhering to the IDHW (Idaho Department of Health & Welfare) Food Safety Standards. ● Food service will be responsible for all food prep. Serving ● At the Center, we do family style meals. The food service employees are responsible for portioning out each food item per classroom into the appropriate serving containers along with the appropriate serving utensils. ● The food service employees will prepare a “meal cart” for each classroom/age group. That classroom will then come to the kitchen and pick up their classroom’s meal cart. ● All serving dishes, utensils and carts will be purchased by the Children’s Center. Cleaning ● Food service employees are responsible for all of the day to day cleaning that comes with cooking in a kitchen. ● Food service employees are responsible for all of the cleaning and sanitizing of dishes ● The food service provider is responsible for all purchases required for cleaning and sanitizing dishes and appliances in the kitchen. The Children’s Center will pay for appliance maintenance. Menus ● Food service is responsible for creating the menus for service. However, the menus are subject to prior approval of the leadership team at the Center. ● Sample menus must be included with the quote.
