Specifications include, but are not limited to: Food and food preparation must comply with federal and state laws, rules, and regulations. A. Schedule 1. Contractor shall provide three (3) meals per day, seven (7) days a week at eight (8) week intervals over a four (4) month period, except for scheduled breaks between sessions (see Attachment H – 2022 CSTP Calendar). B. Menu 1. Menu items must be selected and cooked to minimize health hazards such as food allergies. 2. Meals must include breakfast. lunch, and dinner. 3. Contractor shall refer to Attachment I - CSTP Menu Example as a guide for daily meal preparation. DHS/DYS reserves the right to request changes to the CSTP Menu. C. Preparation 1. The Contractor must prepare and cook meals at the Contractor’s location. 2. The Contractor shall provide adequate personnel to accomplish preparation and delivery of required meals for an average of thirty-two (32) students during each meal. 3. All Contractor employees must undergo safety and sanitation training and meet all Arkansas Department of Health standards for food preparation and transportation. 4. All employees of the Contractor must be U.S. citizens or legal aliens. 5. Contractor shall maintain a “passed” Health inspection throughout the duration of the contract. If at any time the status changes, DYS shall be notified within twenty-four (24) hours of failed status. 6. The Contractor shall maintain a high standard of food service in compliance with the Arkansas Department of Health. If illness occurs, the Contractor may be held liable for medical expenses incurred by the State due to contaminated/adulterated foods being consumed by CSTP stakeholders. 7. All meals must be individually pre-packaged including plastic cutlery with no extra charge for packaging. 8. Meals must be prepared under properly controlled temperatures in accordance with local health standards and assembled not more than twenty-four (24) hours prior to pick up. 9. All meal items must be sanitary and free of objectionable odors or signs of deterioration.
