Specifications include, but are not limited to: The Vendor shall provide three meals per day (Breakfast, Lunch and Dinner) and a daily snack, seven days per week for cadets and on duty cadre. Additional meal requirements for Staff and visitors will be identified by written notice. Second servings will be encouraged when available. The Cadre may provide specific limitations regarding individual cadets. At no time will the Vendor's staff limit cadet portions as a means of discipline. The Vendor shall be notified in writing if a Cadet is on a restricted diet due to medical condition, illness, or confirmed religious preference.; BREAKFAST 0630 to 0800 hours.; LUNCH 1130 to 1300 hours.; DINNER 1700 to 1830 hours.; SNACKS BEFORE 3:30 PM: To include one (1) reimbursable cadet snack during the FDA approved "daytime" snack period.; SNACKS AFTER 3:30 PM: To include one (1) reimbursable cadet snack during the FDA approved "evening" snack period.; Provide 3 meals per day 7 days a week. Submit Complete Cycle menu 2 weeks prior to start date of each cycle for approval by the director of BCA. Second servings will be encouraged when available.; The Vendor shall provide meals to cadets who are performing duties away from the Academy campus. Off-site meals will be prepared as a bag lunch or a hot meal in a styro-foam container which the Vendor will provide. The bag lunch will consist of a minimum of two (2) sandwiches with meat and slice of cheese per sandwich, a piece of fruit; desert i.e. cookies or a fudge bar, a package of milk, water or juice, napkins and condiments. The hot meals in containers will have items from all five-food groups, all napkins, cups and condiments. The transportation of the meals will be the responsibility of the Bluegrass Challenge Academy. The Vendor shall provide all resources necessary to include but not limited to food, supplies and paper products to provide meals for the Kentucky Youth Challenge Academy.; The Bluegrass Challenge Academy will provide the Vendor seventy-two (72) hours’ notice of a change in the meal count. The maximum cadet/cadre head count is estimated at 165. It is expected this maximum head count will diminish during the first four weeks of each cycle. The headcount should stabilize to 90 – 125 cadets/cadre during the remaining 18 weeks of each cycle.
