Specifications include, but are not limited to: Contractor shall provide menus showing their ability to provide diets to exceed chapter 6 in the Florida Model Jail Standards and meet the Good Purchasing Program. Medical menus shall also be provided. At least five (5) weeks of sample menus shall be provided. Proposals must include the menu(s) upon which the cost of service has been calculated, to include the “as served” portion size of each menu item. All menus shall be approved by the Contractor’s registered dietician and reviewed by a dietician selected by Alachua County Sheriff’s Office prior to service.; Contractor shall provide the staff and management for the food service program. Contractor shall be responsible for the routine cleaning and housekeeping of food service preparation, storage, and service areas, and will maintain the standards of sanitation as required by FMJS, FCAC and all applicable state and local regulations including Department of Health.; Contractor shall detail procedures for providing safe, sanitary and secure food service management, to include supervision of inmate labor, and internal security of products and equipment available to inmates. Inmates will be provided as required by the Contractor, subject to the approval of the Director. The Contractor will provide with their proposal a work schedule and job descriptions for all inmate staff, including the number of inmates required per shift. Such personnel will be utilized for the preparation of food, delivery of meals, and general sanitation and cleaning. The Contractor agrees to train and supervise all such personnel, subject to the overall control of the Alachua County Sheriff’s Office. The proposal will include details as to the training to be provided to the inmates.; Proposal shall provide for three (3) meals per day, one of which must be hot, seven (7) days per week, together with sack lunches of comparable nutritional and caloric value, as required by the department. Menus for “sack” lunches shall be provided as part of the proposal package.; Contractor shall provide medical, religious, and special management diets at no additional charge. Medical diets shall be ordered and approved by a physician or designee. Special management diets shall be approved by a physician and ordered by the Director. Religious diets shall be ordered by the chaplain with the Director’s approval. Contractors shall submit a sample of their corrections diet handbook with their proposal. The Contractor shall include in their proposal their policies for serving special meals on holidays. Proposed menus and holidays shall be identified. All such meals will be provided at the contract rate. ; The Contractor shall indicate their willingness to provide catered meals for special events as designated by the Sheriff, with a seventy-two hour notice. The cost per meal shall be mutually agreed upon by the Contractor and the Sheriff or his designee.; Proposal shall include a plan to incorporate free federal or state commodities which shall be used to offset the price per meal for the contract period. Said commodities value shall be equal to fair market wholesale value. Said offsetting price commodities shall be declared to the Director or his designee on a monthly basis. Declaration shall include the type of commodity, amount of commodity by weight or volume, wholesale price per unit, and total wholesale value. Declaration shall also describe the operating expenses due to use of said commodities. Invoices shall reflect adjustment for these commodities.
