Specifications include, but are not limited to: Vendor shall be prepared to serve all meals required starting with breakfast on the first day of the contract and continuing for a twenty-four (24) month period (2 years) to the evening meal on the last day of the contract. Contingency plans are to be written and provided to the MCSO indicating plans of operations during power, steam or equipment failure, snowstorms, global pandemics and/or other acts of God, which adversely affect the routine delivery of meals to the Adult Detention Center. 19.3. Vendor shall be responsible for the timely preparation of meals to be delivered to each inmate housing area pursuant to a schedule provided by the MCSO. The Kitchen Deputy/Correction Officer will be responsible for the delivery of food to the inmate housing areas. 19.4. All food preparation will be the responsibility of the vendor. Inmate labor will be provided when available in sufficient number, a minimum of twenty (20) and a maximum of thirty (30) workers, to operate the kitchen. Any inmate labor assisting in the preparation of food will be under the direct supervision of the MCSO (for security only) and the vendor will be held responsible for and accountable for all food preparation and equipment training
