Specifications include, but are not limited to: 4.11.1 Catch weight cases WILL BE ACCEPTED for this ITB; 4.11.2 UTILITY GRADE MEAT GOODS WILL NOT BE ALLOWED FOR ANY GOODS INDICATED IN THIS ITB ; 4.11.3 Goods indicated in this ITB to be all beef, boneless and MUST come from USDA approved plant and facility; 4.11.3.1 All beef Goods must be of good color, normal to the grade and be practically free of residue from sawing the meat and bones, blood clots, foreign odors, blemishes, discoloration or mishandling; 4.11.3.2 Beef Goods that contain meat from the head, tongue, heart, esophagus, spinal or straight added fat WILL NOT be allowed; 4.11.3.3 All beef Goods bid may be any Beef Class EXCEPT bull or stag, with Yield Grades 1 through 5; 4.11.4 ODOC WILL NOT accept marinated or breaded Goods; 4.11.5 Goods with vinegar solutions WILL NOT be accepted; 4.11.6 Goods may be injected with a solution, other than containing vinegar, up to 10% to enhance performance, freshness and safety. Injected solution must be in accordance with USDA Food Safety Inspection Service (FSIS) requirements; 4.11.7 Good(s) must be gluten-free; good(s) containing wheat-based ingredients will not be accepted; 4.11.8 Goods may be fresh, seasoned; MUST be fully-cooked; and processed from whole muscle, sliced (not shaved) ; 4.11.7.1 Full intact slices shall be no less than 1/8 inch thick by ½ inch length and ½ inch width; 4.11.9 Goods MUST be 100% roast beef, WILL NOT accept pastrami, corned beef, etc; 4.11.10 Beef that is mechanically separated from bone with automatic deboning systems or advanced meat (lean) recovery (AMR) systems WILL NOT allowed.
