Specifications include, but are not limited to: NDOC Food Services policies and procedures require all inmates to be provided three (3) nutritionally adequate meals per day, at a reasonable cost. 2.3.3 The three (3) daily meals consist of two (2) hot meals and one (1) cold meal which is currently a sack lunch. 2.3.4 In State Fiscal Year 2021 (July 1, 2020 – June 30, 2021) this equated with total food purchases of approximately $12,027,828.00. 2.3.5 NDOC Food Services will operate within budgetary restrictions using approved, certified menus and portion control. 2.3.6 NDOC’s menus dictate food specifications within the cost parameters. 2.3.7 The menus meet the nutritional standards as set forth by the State’s Chief Medical Officer pursuant to Nevada Revised Statute (NRS) 209.382.; Meat shall have been inspected and passed by the USDA. 3.2.3 A grading certificate must be provided where required or requested. 3.3 POULTRY 3.3.1 Poultry, fresh or frozen, shall be grade A. 3.3.2 Poultry shall be inspected and passed for wholesomeness by the USDA with a USDA inspection stamp. 3.3.3 Poultry shall be free of discoloration purple or green around the neck. 3.3.4 Frozen poultry shall be purchased as individual quick freeze uniform-size pieces. 3.4 SEAFOOD 3.4.1 Seafood shall be the best quality, fresh chilled or frozen. 3.4.2 Seafood shall conform to all standards and regulations of the health department or agency having jurisdiction over the processing, packing, selling, transporting or distributing of seafood.
