Specifications include, but are not limited to: Bacon, Poultry 4.11.1 Catch weight cases WILL be allowed, unless otherwise indicated in this ITB 4.11.2 All Poultry Good(s) must be processed, handled, packaged, and labeled in accordance with the Wholesome Poultry Products Act and its regulations. 4.11.3 Good(s) may be non-seconds or seconds. 4.11.3.1 If Bidder is bidding non-seconds Good(s) MUST BE 18-22 slices per pound with slice length to be 7 to 9 inch strips and width no less than 0.75 inch 4.11.3.2 If Bidder is bidding seconds, target sizing is 18 to 22 slices per pound and MUST NOT contain ends and pieces 4.11.4 Good(s) may be processed from chicken, turkey, or combination of chicken and turkey 4.11.4.1 ODOC will accept wet cured, smoked or maple flavored Good(s); 4.11.4.2 Good(s) with pork fat will not be accepted 4.11.4.3 Fat content to be no more than three (3) grams per 15 gram serving (1 slice) 4.11.5 Good(s) may be bulk packaged as follows: 4.11.5.1 LAYED-OUT PACK: Slices placed adjacent to each other on grease and/or heat resistant paper 4.11.5.2 SHINGLE PACK: Slices placed on grease resistant paper.
