Main menu categories, sample of items included in each category d. Complete listing of vegetarian and vegan selections e. Complete listing of side items f. Provide details in regards to the quality and customer acceptance of the products utilized within the menu 3. Nutritional information a. Response must address the availability of nutritional content for menu items and address where consumers can find nutritional information 4. Pricing strategy a. Provide details on suggested retail pricing, targeting overall food cost percentages and paper cost percentages based upon suggested retail pricing Healthy Choice Options: 1. Responses should include a description of menu items that would fit under the category of healthy choice or heart healthy 2. Nutritional information must be included for each of these items. Sustainability 1. Students today are interested in a variety of sustainable and social justice issues, such as local sourcing, fair trade, product origin, food security, and carbon footprint. Responses should include how the parent company addresses the issues surrounding sustainability and social justice issues and how these initiatives would be implemented in a branded location at the University of North Dakota.
