1. Preparation of three (3) meals, including 2 hot meals, daily as specified herein during each 24-hour period, with no more than 14 hours between evening meal and breakfast. Any deviations from the provision to provide two hot meals daily shall be previously approved by the Eddy County Detention Center. 2. Purchase of all food and non-food expenses which include but are not limited to: paper and cleaning products,supplies necessary for the performance of the contract, sandwich bags, paper bags, paper towels and napkins for all feeding operations. Provision of disposable trays and flatware may be required from time to time due to unique circumstances and shall be provided by the contractor upon request of the ECDC. The cost for any required disposable trays and/or flatware may be reimbursed by the County. 3. Performance of all regular and routine cleaning of the kitchen area, including all equipment and fixtures therein, in a manner sufficient to continuously maintain such area, equipment, and fixtures in a clean sanitary condition as specified by the Eddy County Health Department and other applicable Federal and State laws. 4. Provision of a trained food service manager for continued supervision of its employees and those inmate trustees assigned to kitchen duty. Contractor agrees to train and supervise personnel and inmate trustees to include the use of equipment safety procedures and maintain proper documentation of compliance. 5. Provision and management of staff support services as the Contractor and the Eddy County Detention Center agree upon. Assignment of a minimum of two (2) employees per shift to oversee and supervise all aspects of the food service operation, including supervising inmates to facilitate correct operation of handling of the equipment, will be required. 6. Conduction of food preference surveys among the inmates when requested by the Eddy County Detention Centers. The responsible food service director shall determine the appropriate mechanism to be utilized for specific categories of complaints, and such must be approved by the Eddy County Detention Center. 7. Provision of a qualified nutrition consultant on staff for consultation and menu review. In addition, the recommended daily allowances (RDA) shall be reviewed by the Contractor at a minimum annually to ensure the Facilities RDA are being met.
