Specifications For All Raw Food The Contractor shall insure that all raw food used for meals shall meet the following specifications: Beef, Veal, Lamb-U.S.D.A. Inspected Poultry- U.S.D.A. Grade A No 1 Eggs and Dairy Products- U.S.D.A. Grade A Frozen Foods- U.S.D.A. Grade A Milk- 2% or Milk – 1% In additional, ground beef shall contain no more than six and one-half percent (6.5%) dry soy. The YDC residents will require two (2) ½ pints of milk (1 or 1 1/2 %) at each meal. Sugar is to be included for unsweetened cereal only and no coffee, tea, or soup shall be served. YDC residents require double entrees for each meal. 10. Youth Detention Facility Special Events The cost for the following special events will be included in the cost per meal pricing: A. A minimum of twelve (12) times a year (once a month) the YDC facility has a volunteer dinner for approximately 50-60 people. B. A minimum of twelve (12) times a year (once a month) pizza parties are held for level 4 resident, approximately 60-70 residents. C. A minimum of six (6) times a year special events including summer cookouts are held for approximately 260 people.
