The selected contractor shall be responsible for: 1. Meal Preparation and Service a. Providing three meals per day to each detainee/inmate (two hot meals and one cold meal), seven days per week, including holidays. b. Ensuring meals meet all applicable federal, state, and local nutritional and health standards, including guidelines set by the National Commission on Correctional Health Care (NCCHC) and the Nevada Department of Health. c. Accommodating medically necessary dietary restrictions. 2. Staffing a. Providing trained food service personnel for all meal preparation, service, and kitchen sanitation functions. b. Complying with all Elko County Jail security protocols, including background checks for contractor employees. 3. Sanitation and Maintenance a. Maintaining high standards of cleanliness and sanitation in accordance with local and state health codes. b. Using the County’s provided kitchen equipment in a responsible manner and reporting maintenance needs promptly
