Specifications include, but are not limited to: The St. Louis County (hereinafter referred to as “County”) is soliciting sealed proposals for food services for the Buzz Westfall Justice Center located at 100 South Central Avenue, Clayton, Missouri 63105 (“Justice Center”). Proposals shall include purchasing all products and preparing all meals for inmates, Intake Service area, and staff. Menus must be planned in accordance with the National Academy of Sciences and the American Correctional Association’s (ACA) Recommended Dietary allowances (RDA) to be an average of 2,500 calories daily and must be approved by a Registered Dietitian from the St. Louis County Department of Public Health. Proposers shall also provide staff, use inmate labor and operate an inmate food service vocational training program. Uniformed corrections officers from the Department of Justice Services (hereinafter “Justice Services”) are assigned to the kitchen area.
