Remove existing Hobart high-temperature dishwasher and associated dishtable components; furnish and install new soiled dishtable with three pot sinks, a new door-type ventless hightemperature Hobart dishwasher, a new clean dish (landing/drain) table; retain and reinstall the existing 2024 garbage disposer and the existing 2025 booster heater; coordinate with vendor for EcoLab monitoring equipment and Owner-provided electrical and plumbing contractors; protect and retain existing steam pipe lines behind the clean dish table area. Scope of Work - Disconnect, remove, and relocate to Owner-designated staging area the existing Hobart hightemperature dishwasher and associated dishtable components. Owner to provide final disposal. - Furnish and install new soiled dishtable with three (3) pot sinks (three-compartment sink) including pre-rinse faucet assembly, twist waste valves, and required accessories. - Furnish and install one (1) new door-type, ventless, high-temperature Hobart dishwasher (see model and options under Specifications). - Furnish and install a new clean dish (landing/drain) table to the left of the dishwasher, length 4′ 5″, for air-drying and clean rack staging as space allows. - Furnish one (1) portable drying rack, 5′ long × 6′ tall, to compensate for limited drying area at the clean table; place per Owner direction and verify stability and clearances. - Retain and reinstall the existing 2024 garbage disposer (InSinkErator SS-100-5-MRS). Provide adapters, reconnection of plumbing/electrical controls, and performance testing. - Retain and reinstall the existing 2025 booster heater. Verify electrical nameplate ratings, reconnect hot-water piping to rinse loop, insulate and secure lines, and confirm performance during startup. - Coordinate integration and placement of the contracted food services vendor’s EcoLab monitoring equipment (temperature/sanitization monitoring). Verify proper operation postinstallation and document settings. - Coordinate all tie-ins and rough-ins with Owner. ***Contractor to provide all necessary electrical and plumbing equipment/connections for the dishwasher and sink systems above the steam tunnel/kitchen floor. ***Provide required loads and utility data (voltage/phase/ampacity; water pressure/temperature; drain and air-gap; condensate requirements) with shop drawings before installation. ***Owner to provide all electrical and plumbing connections below the floor or beyond the kitchen. - Protect and retain existing steam pipe lines located behind the clean dish table area. Provide temporary supports, shielding, and maintain required clearances. No modification to steam lines unless specifically directed in writing by Owner
